Carrot, Beet and Apple Muffins

Muffins: they aren’t just for breakfast! These little baked wonders can be your best friend when it comes to having a quick and healthy snack on hand with kids who seem to be hungry all. the. time. This fast, easy to make recipe uses ingredients you'll find in your pantry, with the added bonus of veggies. Make them ahead, have them around for snack time and if you're an overachiever you can even make a double batch to freeze for next week.

Ingredients:

2 cup of rolled oats

1/4 cup coconut oil, melted

1/3 cup maple syrup

3/4 tsp of cinnamon

1 packet of FoodieKid’s Simple Starters Root Veggie and Squash Pack carrots, pureed according to package instructions

1 packet of FoodieKid’s Simple Starters Root Veggie and Squash Pack beets, pureed according to package instructions

2 eggs

1 tsp baking soda

1 1/4 tsp of apple cider vinegar 

1/4 tsp salt

1/4 cup of milk

1 apple, grated with some of the juice squeezed out with a paper towel

Instructions:

Preheat the oven to 350F. Add the rolled oats into food processor and blend/pulse until oats become a fine powder.  Add the remaining ingredients except the grated apples and pulse until blended. Fold grated apples in as a last step.  Pour into a greased or lined muffin tin and bake for 18-20 min or until a toothpick comes out clean.
