Green Quinoa Fritters

Spring may be in the air but many of us are hunkering down at home trying to stay sane! Cooking for your kids can be trying in times like these so we recommend doubling the recipe and freezing them so you can have them on hand for a quick and easy meal.
These Green Quinoa Fritters are easy to make, flavorful and appealing to both children and adults alike, so you can please everyone sitting around the table with one recipe. Amen to that!
Ingredients:
1 pack of Peas, Zucchini and Green Beans from the Simple Starters’ Veggie Blends Pack
1 tablespoon olive oil
¼ cup fresh basil leaves
¼ cup grated Parmesan cheese
¼ teaspoon garlic powder
¾ cup cooked quinoa
¼ cup almond meal
1 egg
⅛ teaspoon salt *optional
Olive oil spray
Instructions:
Fill a 2 quart pot with water 2 inches from the bottom and bring to a boil. Once the water boils, insert steamer basket and add the contents of the Peas, Zucchini and Green Beans Veggie Blends packet. Close steamer basket, cover, and steam for 10 minutes. Alternatively, you can steam the packet in a microwave by following our package instructions.
Allow the steamed veggies to cool slightly before blending. Using an immersion blender (or standard blender) blend the steamed veggies, olive oil, basil leaves, and grated parmesan until mostly smooth.
Preheat oven to 400 degrees F. In a bowl combine the blended veggie mixture with garlic powder, quinoa, almond meal and egg. Mix until well combined.
Line a baking sheet with parchment paper or a silicone cookie sheet liner. Form 6 equal-sized patties and place on baking sheet. Spray the stop of each patty with olive oil spray and bake in preheated oven for 18-20 minutes (or until tops are lightly golden).
*The patties/fritters are flavorful as is, especially for a toddler or baby. We recommend adding ⅛ teaspoon of salt, if an adult will be eating as well.
