Butternut Squash Farrotto Bowl

With the new year fast approaching, we are looking forward to a return to routine and for many of us, healthier eating habits after some holiday indulgence. Simple, nutritious and uncomplicated meals are welcome this time year, especially ones that are comforting and warm. Check out our recipe for a delicious Butternut Squash Farrotto Bowl, great for lunch or dinner for toddlers and older kids. It checks all the boxes for a feel good meal that also delivers on nutrition. Buon appetito!
Ingredients:
2 tablespoons of olive oil (or unsalted butter)
1 tablespoon minced shallot
1 cup farro (quick-cooking kind)
1 1/4 cup chicken or vegetable broth
1 teaspoon minced fresh thyme leaves
1/8 teaspoon sea salt (optional)
1 packet Butternut Squash from FoodieKid Simple Starters Root Veggie & Squash Pack
1 1/2 tablespoons grated parmesan cheese
Instructions:
Heat the olive oil (or butter) in a medium saucepan or pot, over a medium flame. Add the minced shallot and saute until translucent and fragrant. Add the farro and toast for another 2-3 minutes. Add the broth, minced thyme leaves, and salt (if using.) Bring the broth to a boil and then reduce to simmer and cover. Cook for 15 minutes. While the farro is cooking, steam the Simple Starters Butternut Squash pack according to microwave directions. Once cooked, set the pack aside. After about 15 minutes, check the farro. If all the liquid has been absorbed and the farro looks soft and chewy, it’s time to add the steamed squash, along with the grated cheese. Stir to coat. Cover the pot with the lid and turn off the flame. Allow the mixture to sit together covered in the pot for 5 minutes or until the cheese is melty and the squash is soft. Stir again before serving.
