One Pot Pasta with Simple Starters Sweet Potato, Broccoli & Kale Veggie Blends

Raise your hand if you’re looking for a super easy homemade meal that will please everyone in the family and involves minimal clean up. We’ve got you covered! We present our One Pot Pasta recipe featuring Simple Starters’ Sweet Potato Broccoli and Kale Veggie Blend. Hearty, healthy and all in one pot, it’s a triple threat on the dinner table.

Ingredients:

1 Tbsp olive oil

1 small red onion, finely chopped

12 oz whole wheat penne

3 cups chicken broth, or water

2 packs Simple Starters Veggie Blends: Sweet Potato, Broccoli and Kale

2 Tbsp lemon juice, plus 2 tsp lemon zest

2 oz cream cheese (about ¼ 5.2 oz pkg)

¼ cup freshly grated Parmesan cheese

Instructions:

Heat the oil in a large deep skillet over medium heat and cook onion, stirring occasionally until very soft 6 to 8 minutes. Add pasta and chicken broth (or water), and bring to a boil. Uncover, reduce heat to simmer and cook, stirring frequently for 6 minutes. Add the Simple Starters Veggie Blends: Sweet Potato, Broccoli and Kale packs and return to a simmer, cooking until pasta is cooked through, 5 to 7 minutes more. The liquid should be mostly evaporated. Remove from the heat. Add lemon juice and zest, cream cheese and parmesan, and stir until cream cheese melts.  

For adults, serve with freshly chopped chives and season to taste with salt and pepper, if desired. For younger eaters, cut penne into small sizes as needed.
