Protein Packed Avocado Toast for Baby

Avocado might be the best thing to happen to sliced bread since butter. It’s rich, delicious and quite a bit healthier than butter. Avocado is full of heart healthy fats and fiber (3 grams in ⅓ of an avocado to be exact!) which is great for growing baby’s overall growth, brain development, and digestive system. The soft texture also makes it a very convenient baby food alone or added to other ingredients.
While avocado is very wholesome, it does lack protein. Protein is essential for muscle development and growth. The recommended daily amount of protein for 1-3 year olds is 13 grams. One easy way to create a well rounded meal in one dish using avocado is to add a package of Simple Starters Veggie Blend: peas, zucchini and green beans. This blend contains 3 grams of protein, 3 grams of fiber, over 65% DV of vitamin A, 10% calcium and 10% iron. By the way, a healthy dose of Vitamin A is good for eye and skin development. Iron is important for immunity and steady growth, and calcium does benefit strong bones, just as you were told when growing up.

Ingredients:
1/2 avocado
1 Simple Starters Veggie Blends: peas, zucchini and green beans
1 Slice of whole grain bread
Instructions:
Steam a 4 oz package of the veggie blend for 10 minutes.
Lightly toast bread.
Combine steamed veggies and avocado.
Fork mash for chunky texture or blend combo for a creamy consistency.
Spread protein packed avocado mixture over toast.
Cut into squares or shapes & garnish with chopped tomatoes.
